Four fresh summer salad recipes with only four ingredients

Summer is just around the corner which can only mean one thing – time to for some serious alfresco lunching.

So, if you’re on a bit of a budget or just want something quick to throw together before you head to the garden, these four simple 4-ingredient summer salads are mouth-watering, purse friendly and can be made in a matter of minutes:

Caprese Salad

What Is It?

This simple Italian salad is made up of mostly tomato and mozzarella. The idea being that the bold colours emulate the red, white and green of the Italian flag.

Stunningly vibrant on the plate and tasty too – it is easy to see why this is one summer salad the Italians make time and time again.

What’s in It?

· 1.5 Vine-Ripened Tomatoes (Sliced)

· 0.5 Tbsp Extra Virgin Olive Oil

· 1 Ball Mozzarella (Sliced)

· Handful Fresh Basil Leaves

How Do I Make It?

1. Arrange the sliced tomato on a large flat serving plate.

2. Drizzle with olive oil and top with sliced mozzarella.

3. Scatter the basil leaves over the top. If you wish, you can season with salt and pepper.

Kale Salad

What Is It?

A leafy green salad with a slight kick – perfect for a late afternoon lunch. As kale is a dark leafy green it has the added benefit of being a fantastic source of iron too.

What’s in It?

· Large Bunch Curly Green Kale (torn into small pieces)

· Quarter Cup Extra-Virgin Olive Oil

· 1 Lemon (Juiced)

· 1 Cup Grated Parmesan

How Do I Make It?

1. Place torn kale leaves into serving bowl.

2. In a separate bowl, mix together the lemon juice, olive oil and garlic until emulsified.

3. Discard the garlic from the mixture and drizzle over the kale, tossing together well.

4. Sprinkle the parmesan over the top and toss together again.

Avocado, Mango & Bacon Salad

What Is It?

The humble avocado. No salad list worth a social media flat - lay should be without it and for a pretty strange looking berry - yes, berry – it is one of those foods we just can’t get enough of.

This one is the perfect summer salad for when you fancy something that little bit different; bringing a winning combination of both sweet and slightly salty to the party.

What’s in It?

· 2 Slices of Lean Bacon

· Half Large Mango

· Half Medium Avocado

· Half Red Radish (Finely Sliced)

How Do I Make It?

1. Cook the bacon until crispy.

2. Thinly slice the mango and avocado.

3. Arrange the bacon, mango and avocado and a large serving plate.

4. Scatter sliced radishes over the top.

Feta and Beetroot Salad

What Is It?

An earthy yet tangy salad with a range of flavours, textures and colours. Like all the salads listed the ingredients here are wonderfully simple and interchangeable.

What’s in It?

· 30g Mixed Salad Greens

· 25g Crumbled Feta

· 1 Diced Beetroot

· Half Tbsp Balsamic Vinegar

How Do I Make It?

1. Place the mixed salad greens in a serving bowl.

2. Sprinkle with the feta and beetroot.

3. Drizzle with balsamic vinegar before serving.

Of course, salads that include lots of rainbow- coloured fruit and vegetables are an awesome source of vitamins and minerals as well as soluble fibre. If possible, try to have at least 5 portions of different fruits and vegetables per day if you can, to keep you feeling your best.
